- 1kg Chicken pieces/portions
- 1 packet (40g) French onion soup mix
- 1 cup Coca Cola
- Fresh coriander for garnish (optional)
Ready-cut fresh chicken portions with bones were used for this recipe however you may use your own choice of cut, with or without bones. You will require an oven-proof flat casserole dish to lay the portions in a single layer. When done pour the coca cola and sprinkle chicken with half of the soup mix.
In a preheated electric oven on 200 degrees place the uncovered chicken on the middle shelf and cook it for 30 minutes. Now bring the chicken dish out of the oven and turn each piece over. Shake the dish so that the sauce in the dish is mixed well. Sprinkle the remainder of the soup mix over the chicken pieces and put the dish back in the oven for another 30 minutes. When this time is up the chicken would have a golden brown colour to it and the sauce at the base would have a thick gravy-like consistency. Serve with salad or over a bed of rice, garnish it with green coriander if preferred.
Variations and Suggestions
I have used this recipe often when my students were living with us. This recipe always became a favourite for many who came to stay with us. I would like to dedicate this recipe to my Japanese student Ai Otsuki who stayed with us a long time ago because this was her favourite recipe to eat. I hope she gets joy in knowing that she is still thought of fondly.
The cooking time for this dish may be different if the chicken portions are very large or very small. All up it shouldn’t take longer than 60 minutes to fully cook the chicken. However those who don’t like using chicken with bones then I suggest you use chicken thighs instead because they have a better flavor than breast meat, again depending on size of thighs used it shouldn’t take longer than 40 minutes to cook fully.
Packet soup mixes will differ in flavour and salt content from one brand to another so be aware and do your homework, and then stick to what you know best, and what your family would prefer. This is a very cheap and easy meal for 4 adults, especially when you have to use up some old coca cola in the fridge. If you prefer this dish to deliver more sauce then use double the quantity of soup mix and coke. Enjoy!
