CF 13/60 Charred String Beans with cherry tomatoes

Ingredients

400g string/green beans topped and tailed.

100g cherry tomatoes

1 clove garlic crushed/chopped

2 tablespoons oil

1/2 teaspoon salt

small pinch of sugar

white pepper to taste

1/2 cup cream

Method

In a fry pan over moderate heat add the oil followed by beans and garlic and remaining ingredients except cream. Cook by stir frying on all sides for roughly 10 minutes till slightly charred. In between you may be required to add a sprinkling of water to stop the beans from burning and it will also help to cook the beans further.  Check the seasoning and now add the tomatoes and cook for further 5 minutes. Before cooking is complete smash the tomatoes down slightly so that it soaks in the flavour from the pan. Remove from the pan and keep aside.

In the same pan add the cream and cook to thickened it for roughly 3 minutes. Season the cream as you wish by tasting it first because the residue from the pan should have given the cream some flavour. Arrange the beans on a serving dish and then drizzled it with the cream and serve as a side dish or a vegetarian meal. Don’t add the cream if this dish to be for a Vegan consumption.

Variations and My Story

A simply dish with lots of flavour. You may add a knob of butter to the cream but I like to keep it as simply as I can. I can happily eat this with my roast meat or simply as a meal. I topped mine with rice and I felt satisfied.  A clean, simple and healthy dish, it deserves to be on our dinner plate, once a week!
