Ingredients

4 pieces of middle bacon

4 eggs (small 50g each)

4 pieces of bread without crusts

salt & pepper

butter or margarine

4 egg poachers or ramekin dish or muffin pan

Slices of tomatoes (optional)

Method

Preheat electric oven at 200 degrees for 10 minutes.  Grease the egg poachers, ramekins or a muffin pan. Butter the bread slices on both sides. Cut the bread into 4 triangles and cut each bacon into 3 pieces in lengthwise. Line the egg poachers or ramekins or muffin pan with bacon pieces first then followed by the triangle cuts of bread to fit the base to stand up on sides to hold the egg in, see picture. Bake it in the oven for 5 minutes then pour the eggs, season and cook for 6 to 8 minutes depending on how hard or soft you want the centre of the eggs to be. Serves two and with an extra toast and grilled tomato slices if you wish.

I used the egg poachers (see picture) and needed to stand them on the muffin pan to secure it. Use the alternative dishes and the ramekin dish may even take larger eggs because the egg poacher can only accommodate smaller eggs. The larger eggs will run over on the sides of poachers and be wasted.  Enjoy traditional English breakfast with a difference!

Variations and My Story

I don’t mind an occasional big breaky like this. You may serve sausages and baked beans for an even bigger breakfast. My creation is stylish and serves 3 things in one dish and it would make it an impressive treat when served to visitors/dinner guests during brunch, and cooking it in the oven also frees up lots of your stove top for other things you can cook at the same time. Most traditional breakfast are cooked on a stove top now you can do something different. Enjoy!
