CF 22/60 Chicken & Chives in Cracked Pepper Cheese sauce

Ingredients

200g chicken breast cut into bite-size pieces

100g cracked pepper cheese roughly chopped or crumbled

300 ml cream

60g fresh chives

1 small onion sliced thinly

2 cloves garlic chopped, crushed or grated

50g butter

1 dessertspoon oil

1 level teaspoon salt or to taste

extra cracked pepper (optional)

Method

Add the butter and oil to a saucepan over a medium heat and cook the onion and garlic till slightly transparent for about 5 minutes. In the meantime cut the stem part of the chives finely and add it to the pan and stir.  Reserve the leafy part of chives for later.  After 5 minutes are up then add the chicken and cook fora further 3 minutes.  Add the cream and the cheese and season it with salt and pepper as preferred.  Cook till cream comes to boil on simmering heat and the cheese has melted, this would take roughly another 5 minutes.  Add the chives and when it comes to boil again remove from the heat and check for seasoning and adjust. Serve it with pasta and some crusty bread as pictured or as desired or with my ‘stove top pizza base’ recipe CF21/60.

Variations and My Story

Another dish using ingredients from my ‘fridge. I generally pick up items that aren’t on my list when shopping but they have been substantially discounted due to it nearing its expiration date. This gives me the opportunity to keep my costs low when developing a recipe, plus it gives me the challenge to create new recipes without extra cost and I make sure that the bought products aren’t wasted.  I could quite easily produce a feast using ingredients bought this way and where most would end up spending 3 times more than my shopping bill. I love the challenge and I hope you enjoy the recipe. By the way, if you fancy it, add 2 rashers of chopped bacon while cooking the onion for that added extra flavour, however, butter added to this dish is quite rich. I stirred pasta through my sauce and it served four of us.  Parmesan cheese can also be added when serving. Enjoy!
