CF 28/60 For Your Valentine

Ingredients

200g capsicum from ‘CF 27/60 Sweet Red Peppers’

300 to 500g Spanish Chorizo sausages

1 tablespoon oil

Fresh Coriander for garnish

Method

On a stove in a hot pan add the oil and when hot again fry the chorizo sausages.  Or you may prefer to grill them. Depending on the thickness of the sausages it may take up to 20 minutes to fully cook them. Ensure that the heat is not too high. Stir frequently to stop it burning. Once cooked let them rest while you assemble the capsicum sauce.

Take 200g  of capsicums without the vinegar mix from my previous recipe ‘CF 27/60 Sweet Red Peppers’ and place it into a blender and blend to a puree within seconds. If you wish to season it with salt and pepper then do so but I didn’t need to because it already had plenty of flavours from the vinegar mix.  To assemble see my recipes pictures. Place a dollop of sauce in a circle on a dinner or a serving plate and decorate it with coriander leaves and place a piece of chorizo cut into diagonal at one end and flat on the other end to stand them up. Decorate the sauce into a heart shape in the centre. You may win some hearts over this Valentine’s Day and serve it as an entree or simply a shared platter for 2 with some champagne!
