CF 37/60 Sausages in Sweet n Sour Sauce

Ingredients

5 to 6 cooked sausages in bite-size pieces

2 medium carrots in bite-size pieces

1 small red & green capsicums in bite-size pieces

30g base of spring onions roughly chopped

5 to 10g fresh ginger thinly sliced

1 teaspoon cornflour mixed in a little water

1/2 cup white vinegar

1/2 cup water

1 tablespoon oil

30g tomato paste

30g sugar

7g salt

cracked pepper ( optional)

200g fresh or canned pineapple (optional)

Spring onion tops to garnish (optional)

Method

This is another way of using up any left-over sausages. In a pan or pot add the oil over a moderate heat and add the ginger and stir-fry it for roughly for 1 minute. Now add both the liquids, tomato paste, sugar and salt. Bring to boil then simmer covered for at least 5 minutes. Now add the carrots and simmer for another 3 to 5 minutes depending on the finished texture of the carrots. Add the sausages, pineapple (optional) and the capsicums and simmer for a further 5 minutes. Stir the ingredients well then add the cornflour mixed in water to thicken the sauce and simmer for another minute or two. Check for seasoning and add pepper if required and salt as preferred.

Variations and My Story

As you know that I recently had a sausage sizzle fundraiser to raise money for my Crowd Funding project. I decided to freeze the left-over sausages and bring them out whenever I needed to experiment. My students seem to like sausages as a meal often but I am not a huge fan of them myself, but, while I have the sausages I have decided to find various uses for them in a recipe so here is another one for you to try making. Pineapple will enhance the sweet and sour flavour to the dish but it is optional. The sugar content in this recipe perhaps could be more by adding extra to make it sweeter but try the recipe the way it is and if needed more sugar then you may add it after tasting it in the final stages first, then adjust with another teaspoon or so……  I hope you enjoy!
