CF 40/60 3 minutes Noodle Omelette

Ingredients

1 packed 3 minute noodles made by packet instructions

2 large eggs and a tablespoon of water beaten  together

salt & pepper for seasoning

Fresh coriander/spring onion/shaved carrot for garnish

2 tablespoons cooked peas (optional)

1 tablespoon oil

Method

In the beaten egg add some of the garnish as desired and and peas if using it then season it with salt & pepper. Drain the noodles (unless using Mi Goreng variety) to it and stir and mix well. On a moderate heat place a small fry pan with the oil. When the oil is hot add the noodle with the egg mix, cover the pan and cook for 2 minutes and then turn it over, cook for one or two minutes longer with or without the cover this time. Either serve it whole or cut into 4 wedges and serve with some salad for two or pack it for kids lunch boxes.

Variations and My Story

This is an easy recipe, like a child’s play really! Add your own variations such as meat, chicken etc and your choice of garnishes, vegetables and serve as you please. It is a great dish for packed school lunches and it’s quite filling too. Not only very nutritious but it also takes ‘next-to-no-time’ to prepare and cook. Enjoy as you wish. I think the ‘3 minutes’ noodle deserves recognition for its simplicity, bulk and nutritional value added to health when cooked this way!
