CF 55/60 Minced Lamb Potatoes and Peas

Ingredients

500g minced lamb

500g potatoes diced into small pieces

1 cup peas

2 medium red onions (Spanish) finely chopped

4 cloves garlic grated

10g fresh ginger grated

1 tablespoon curry powder

1 tablespoon tomato paste

1 teaspoon salt or to taste

1/2 teaspoon cracked pepper or to taste

1 to 2 cups water or stock

3 tablespoon oil

Method

In a large pan on medium heat add the oil and fry the onions till soft for roughly 5 minutes. Add the ginger and garlic and stir fry for another 2 minutes. Add the mince and brown it on high heat for roughly 3 minutes. Add all of the remaining ingredients with only 1 cup of water first and reserve peas for later too. Bring to boil, stir well to combine and cook covered on simmer for 30 minutes. At this point if needed more liquid or stock add the remaining 1 cup gradually to the consistency that you desire. Generally this dish needs to be thick without much liquid so decide on the liquid as you desire. Hot water is best used during the middle or last stages of cooking for any recipe because the cold water will bring the temperature down and will slow the cooking process. Now add the peas and cover and cook for 5 minutes, check the seasoning and add more salt if needed and again if using stock remember to use less salt because all stock products usually have added salt already.

Variations and My Story

This is a great dish for anyone who can’t spare more than one hour cooking and preparing. This is a favourite with children too. A versatile dish that can be eaten on its own with crusty bread, in a wrap or with roti as well as a filling for a pie or pasty. My dish resembles a traditional dish called ‘Keema Matar’ but this is my take on the recipe that I have used since the beginning of my cooking days. Enjoy!

    I think I might try this substituting the lamb for brown lentils. Kids like peas so ire o they would go for this.
