CF 35/60 My Fried Fusion English Breakfast for two

Ingredients

4 sausages (cooked)

4 rashers of bacon diced

2 eggs

2 tomatoes cut into 4 slices each

salt and pepper to taste

2 cups of cooked rice

1 tablespoon oil

Method

In a non-stick fry pan add the oil and place it on moderate heat. In the meantime cut the sausage into bite size pieces. When the oil is hot fry the diced bacon and stir-fry it for roughly 1 to 2 minutes then add the sausages and cook further to heat it for roughly another minute or two. Add the cooked rice and stir to combine well for another minute. check for seasoning and if necessary add salt and pepper then crack open the two eggs and add them to the rice. Stir to scramble the eggs then combine with the rice. This dish is certainly for two and it may even serve 3.

In the meantime fry the tomato pieces in little oil to your liking or leave it freshly sliced and serve it with rice.

Variations and My Story

This is my take on English breakfast when one has too many left-over cooked sausages from the previous day’s sausage sizzle fundraiser! I was brought up eating rice during my young days for breakfast, as porridge, or fried, in cakes and as sticky rice. Eating rice during breakfast is nothing new to me so I hope you too enjoy my take on fried English Breakfast in my fusion way. If you could handle the rice spicy then try adding some cut dried chilies at the beginning stage of frying the bacon as well as add some sliced onions too if you wish. I don’t mind any combination they are all yum to me and Stephen and hoping you will enjoy this quick dish.
