- Mini Pizza Ham/Chicken/Pineapple – Ingredients:
- 6 English Muffins – split into halves (12)
- 100g shredded ham or chicken
- 100g Mozzarella cheese – grated
- 100g Tasty Cheddar – grated (optional)
- 100g Pineapple chunks – canned variety
- 1 cup Pizza sauce – ready-made variety
- Fresh Oregano/Basil
- Easy Pancake – Ingredients:
- 1 Ready-made pancake shake mix
- 1 60g egg
- 2 tablespoon melted butter or oil
- 2 tablespoon sugar
- extra oil or butter for cooking
To assemble pizza. The English Muffins split into halves will make 12 mini pizzas. Depending on the appetite of your child the pizzas made for my grandkids were quite filling and we had some leftovers for them to take awaywith them too. Place the halved bases on to a large tray with their cut side facing up . Take a dessertspoon (or more if preferred) of the pizza sauce and spread it evenly on to the bases. Sprinkle with some cheese and this could be the tasty cheddar if desired then the ham/chicken, herbs and pineapple chunks then top it off with the mozzarella cheese. Most kids love cheese so the tasty cheddar can be added to the base not only to add flavour but to bulk up the mozzarella because the mozzarella cheese not only has the mildest flavour but can also be expensive. You may assemble it with the toppings as you wish but finishing off with the mozzarella last so that when it melts on top of the other ingredients will add flavour while browning the tops giving visual appeal. Bake in a preheated electric oven on 200 degrees Celsius for approximately 10 minutes or until the top is all golden brown and the cheese has melted. Serve as desired.
To assemble the pancakes. Follow the method on your ready-made bought pancake shake mix. Before shaking the mixture with water/milk add the egg, oil/butter and the sugar then proceed as directed on the pack. Let it stand while assembling the pizzas. When pizzas are in the oven place a small fry pan on a moderately hot heat, grease it with oil or butter, when hot pour the batter in the same circle size as the English muffins. Cook for one minute with the pan cover on then turn it over and cook uncovered for another 30 to 60 minutes. When cooked fold it into quarter and serve. See suggestions.
Variations and Suggestions
When making the pizzas be sure to provide several different toppings so that a child can grow to like variety of ingredients which they normally wouldn’t eat. This would be a fun way to introduce them to making their own pizzas by choosing their own ingredients; capsicums, onion, olives, herbs, cheeses, meats, vegetables etc. To ours we added all of the mentioned ingredients plus the ham and pineapple. You may crowd the bases with as much as they will hold before falling off.
The pancakes done this way is soft/fluffy (due to the egg) at the same time crunchy, due to the butter/oil added to the ingredients. The sugar added to it caramalises the pancake a little adding further taste and appeal, and this eliminates the desire to add extra sugar when serving, the result is a no fuss recipe that I can serve straight out of the pan. You can also serve with whatever else you desire such as banana, fresh fruit, maple syrup, sugar, lemon juice, jam, chocolate spread, ice cream with chocolate sauce etc. I would keep it simple for children so that I can enjoy quality time with them allowing more time for play instead of fussing.
