Ingredients

  • 800g potatoes – peeled and thinly sliced
  • 300g onions – sliced
  • 300g bacon – diced
  • 300ml cream
  • 150g tasty cheese – grated
  • 1 teaspoon rock salt or to taste
  • seasoning of pepper
  • 5g fresh thyme
  • 2 tablespoons olive oil
  • 2lt baking dish

Method

Saute onions and bacon in the oil on moderate heat till onions become a little transparent, approximately for 10 minutes. Within that time peel and slice the potatoes then arrange a layer of slices in the baking dish. Divide the onion mix and the cheese into four so that it can be arranged on top of each layers of potatoes.  Sprinkle each layer with the onion mix, cheese, salt and pepper and some thyme. Then lightly beat the cream and pour on top of the whole mixture in the dish and sprinkle with some more cheese. I have provided you with each step in the recipe photo which show the final cooked result; one photo before adding the cream and one photo with the cream on top before placing it in the oven. Bake in a moderately hot electric oven 200 degrees Celsius for 40 to 50 minutes till the potatoes are fully cooked and the cheese on top is bubbling and golden in colour. To check that it is thoroughly cooked by inserting a skewer in the centre of the dish, the potatoes should be soft. I have kept this dish very simple and easy. For those who prefer this dish to be vegetarian then just omit the bacon and add more herbs instead. Up to 1kg of potatoes may be used.

Variations and Suggestions

Many varieties of cheese can be used for this dish especially for a tasty vegetarian alternative by omitting the bacon. This recipe can accompany many other dishes or simply eaten by itself as a main meal. This also is a great time-saver and a favourite with families with young children who may be fussy eaters.
