Crown of Chicken Drumsticks with Lemon and Sage (one pot roast)

Ingredients

  • 8 pieces Chicken Drumsticks – (1kg approximately)
  • 20g fresh sage leaves – chopped roughly
  • 1 medium lemon – zest only
  • 2 dessertspoons lemon juice
  • 1 teaspoon grated garlic
  • 1 level teaspoon salt
  • 1/4 teaspoon ground pepper
  • olive/cooking oil spray

Ingredients for one pot roast:

  • 12 med/small potatoes – peeled
  • 3 medium carrots – peeled and each cut into 4
  • 200g green beans – topped and tailed
  • salt and pepper for seasoning

Method

In a bowl mix the sage, garlic, zest, pepper and salt together. Divide this mixture into 8 then take each portion and place it under the drumstick skin, using it as a stuffing. Spread it as much as it will allow you to then smooth the skin over the mixture holding the mixture in. Spray each drumstick with the oil spray and drizzle each with lemon juice. Season with salt and pepper.

In a round oven-proof dish place the drumstick against the edges in a circle to form a crown. To turn it into a one pot roast place potatoes, beans and carrots in the centre of the dish and season it with salt and pepper. Bake in the centre of an oven on 200 degrees Celsius for approximately 60 minutes. One option, if  you prefer, is to place the carrots and beans on top of potatoes towards the end of cooking for the desired texture and roast till the drumsticks are fully cooked. Serve two drumsticks per person with equal share of vegetables and the juices from the pan.

Variations and Suggestions

The ends of each drumstick can be covered with foil before roasting to create a good appearance. This is an easy dish when entertaining or busy looking after a young family because after prep work it can all be left in the oven to cook by itself. However those wanting their carrots and beans a little underdone should cook it as suggested or simply microwave, boil or steam them before serving. If you are not fussed though, the one pot method will really save you time. Enjoy it further with salad and lemon wedges.
