No Fuss Cauliflower soup

  • 1 cauliflower (approximately 1kg) flowerrets only
  • 6 bay leaves
  • 3 sprigs thyme
  • 1 teaspoon white peppercorns
  • 100g onion – cut into quarters
  • 100g carrot – cut into four peices
  • 1 heaped teaspoon salt
  • 4 cups water/stock (stock optional)
  • 2 cups full cream milk
  • Cream (optional)
  • Croutons (optional)


In a large saucepan or pot add the water with bay leaves, peppercorns, onion, carrot and salt bring to boil and simmer for 20 minutes. Once cooked strain this liquid and return it to the same pan then add the cauliflower and sprigs of thyme and cook for another 20 minutes until the cauliflower softens almost to pulp. Remove the springs and blend the cauliflower to a puree. Return this back to the stove and now add the milk. Bring gently to boil, check for seasoning and serve with croutons on top decorated with fennel prongs (optional) as shown. Drizzling the soup when serving with some olive oil (see picture) is another good option.  The recipe pictured was enjoyed with my homemade bread.

Variations and Suggestions

A simple, cheap and easy recipe that should please many who don’t know how to use up cauliflower when the price is cheap. I hope you’ll enjoy this no fuss recipe with minimal ingredients and minimum cost. Chicken or vegetable stock may be used but is not necessary though, because the recipe above is simply delicious and beautiful. Some of you may want less salt and for those who don’t mind salt in their diet  season with salt and pepper as needed. For a creamier alternative replace the milk with cream. This dish can be made thicker or lighter by reducing or adding the liquid quantity, but you will find it will be thick enough to start. It will make approximately 10 cups in total.

    This is a deliciously simple soup; a quintessential winter offering. Follow the recipe as written and you are unlikely to need any modifications. I was furiously looking for more when I got to the end of my cup.

      Hi Jon, thank you for posting your comment. This recipe was created for those who love soup but more so for those who are lost and have no recipe ideas when presented with a vegetable like cauliflower. I am glad you found this recipe easy and delicious as that is my aim to produce recipes simply for everyday meal but flavorsome and healthy. Initially a mild recipe but add extra salt and pepper to enhance it further and a dollop of sour cream makes a good option as well. Enjoy!
