No Fuss Stir Fry

  • Servings : 2
  • Prep Time : 5m
  • Cook Time : 10m
  • Ready In : 20m

  • 200g mince meat (from my Steamed Pork and Mushroom Bun recipe)
  • 150g baby carrots – cut into 1/2 or 1/4 lengthways
  • 150g snow peas
  • 100g onion – sliced
  • 1 hot chili (optional)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons water
  • 1 to 2 tablespoons cooking/olive oil

Add the oil to the wok on moderately high heat and when hot add the onions and carrots along with the chili (if used). Stir and cook for roughly 2 to 3 minutes then add the salt and sugar and stir for another minute to caramalise the mixture. Add the mince mixture and stir for another 2 to 3 minutes. Now add the snow peas and water and stir, cover and cook for 2 minutes longer and serve over  a bed of rice or with noodles. With the prepared minced ingredients it should take approximately 10 to 12 minutes to serve this dish from the start of cooking.

Variations and Suggestions

As mentioned in the ingredients list, the mince mixture for this recipe came from Steamed Pork and Mushroom Bun recipe. To make a busy life easier it would be beneficial to make extra filling when making the bun recipe and then freezing the rest in quantities of 200g for  later use. This will suffice as a two person meal. I love meals like this because I know I am eating something which I prepared myself and I know what is in it. If preferred a dessertspoon of oyster sauce can be added at the end of cooking for desired seasoning. A teaspoon of grated ginger or garlic added at the begining stage of stir frying and spring onions added at the end will enhance the flavour of this dish even further.

If you wish to use freshly bought mince meat instead of what’s listed in the ingredients list then you must add extra flavour to your mince during cooking by adding 2 dessertspoons each of oyster and light soy sauce. For kosher and halal preference use chicken, beef, fish or prawn mince. There is no limit to what you can do provided you have the basic stir fry method covered. In this case being familiar with the sauces, quantities and cooking method  will be a huge asset in preparing quick delicious stir fries.
