Seafood Marinara and Khaffir Lime2013-06-30

- 400g seafood marinara mix (gourmet variety)
- 150g green beans – cut in half
- 2 medium tomatoes – cut in wedges
- 2 small red chilies – left whole
- 4 khaffir leaves
- ½ lime – juice
- 250g tub – Philadelphia Thai green curry cooking cream
- ½ teaspoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon ground fennel
- ¼ teaspoon ground white pepper
- 1 level teaspoon salt
- 50g onion – thinly sliced
- 2 cloves garlic – finely grated
- 3 tablespoons olive oil
In a fry pan or wok on medium heat add the oil, when the oil is hot add the onion, garlic, chilies and the khaffir leaves. Stir the mixture and sauté it for roughly 5 minutes. Now add the beans with turmeric, cumin and fennel, stir and cook for another 5 minutes longer. At this stage of cooking if the mixture happens to stick to the base of the pan you may add a drop of hot water to loosen the mixture.
Add the cooking cream, tomatoes, and season it with salt and pepper. Bring to boil and simmer for 2 minutes. Add the marinara mix give it a good stir being gentle not to break any of the seafood bring to boil again then simmer covered for roughly three minutes. Check the seasoning then serve over-boiled rice or with bread and even vermicelli rice noodles. This mixture will serve a meal for two.
Variations and Suggestions
Marinara seafood mix is such a good meal for people who don’t have much time to cook and love the variety of seafood in the mix. However my recipes generally use the gourmet variety of Marinara mix because it comes with a variety of fish, large green prawns amongst other seafood combinations. You may already have your own favourite combination so try it.
I am a fan of spaghetti marinara which is generally cooked in red tomato sauce, try this recipe with my vegetarian pasta sauce recipe from my blog and if the sauce has already been made in advance and previously frozen then it will take no time to assemble this dish saving you that much needed time.
