Steak Onions and Green Beans

Ingredients

  • 250g piece of Beef Steak
  • 100g onion – roughly sliced
  • 50g red pepper – roughly sliced
  • 250g green beans – trimmed and cut into two or three pieces
  • 1 level teaspoon grated ginger
  • 1 level teaspoon grated garlic
  • 1 red chili – chopped (optional)
  • 1/2  teaspooon salt
  • 1/2 teaspoon sugar
  • 2 dessertpsoons oil
  • 1 dessertspoon soy sauce
  • 2 dessertspoons – hot water
  • salt and cracked pepper for seasoning
  • 1 teaspoon cornflour – mixed with 2 dessertspoons water

Method

Season the beef steak with salt, pepper and rub or spray some oil onto both sides and set aside. In a fry pan on moderate heat add 1 dessertspoon of oil and let it heat till smoking hot. Place the steak into the pan and cook for one and half minutes on each side turning it over only once during cooking then remove from the pan and let sit while cooking the remaining ingredients.

In the same pan add the remaining oil and stir fry the onions, garlic, ginger and beans stirring for 2 minutes keeping the heat moderate to high. Now add the salt and sugar and continue stirring for another minute to caramelise the mixture.  Add the hot water and cover and cook further for two more minutes till the beans become tender. In the meantime cut the steak in chunky strips and when the two minutes are up add to the pan with the juices from the meat when resting, plus the capsicum and the soy sauce. Stir well, cover and cook for another minute.  Finally, mix the corn flour and water mix and add it to the pan, stir for few seconds till heated through and thickened and then serve with rice.

Variations and Suggestions

This is an easy and healthy dish using mostly fresh ingredients. Steak and onion are a marriage made in heaven, the flavours blend together and are simply irresistible. The one pan used is ideal because the pan is already flavoured when the steak is first cooked. You may instead choose your own method of tenderising the steak and then follow with this recipe. The chili used in this dish wasn’t the hot variety; please use your own discretion as to how hot or mild you want your chili to be if used. This recipe will feed two when served with rice.
