Ingredients

  • 2 cups of mince meat – Pork, Beef or chicken
  • 1 cup of bread crumbs
  • 1 egg – lightly beaten
  • 1 dessertspoon light soy sauce
  • 1 tablespoon sesame oil
  • ½ cup spring onions – chopped
  • 1 teaspoon finely grated ginger
  • 4 dried mushrooms or fresh Shittake/Brown mushrooms – finely chopped
  • ½ teaspoon white pepper
  • 1 teaspoon sugar
  • 1 level teaspoon salt
  • Cornflour for dusting and rolling of meatballs
  • Sauce ingredients:
  • 3 tablespoon water
  • 2 tablespoon olive oil
  • 1 dessertspoon tomato paste
  • 1 tablespoon extra ginger – sliced finely (optional)
  • 1/2  cup each red and green capsicum – chopped
  • 1/2 cup spring onions – roughly chopped
  • 2 tablespoons sugar
  • 2 tablespoon vinegar
  • 2 tablespoon light soy sauce
  • ½ cup water
  • 1 teaspoon corn flour
  • 3 tablespoons extra olive oil for frying meatballs

Method

If using dried mushrooms make sure you re-hydrate them in some hot water for 10 – 20 minutes first. Select your preferred choice or a blend of mince meats. Add all of the first ingredients listed in a large bowl with the mince of your choice and mix them well.  Take a dessertspoon of the mixture in your hands and roll them into little meat balls and set aside.  Put a large fry pan on medium heat, now add the oil to fry meatballs.  When the oil is hot place the meatballs and cook them for 10 minutes turning them over often to brown them lightly.  When all done take them out and put them aside and now to assemble the sauce.

In the same pan add extra olive oil followed by the capsicum and the spring onions and extra ginger slices for warmth as desired.  Stir these on a medium heat for roughly two minutes.  Now add all of the sauce ingredients except corn flour and cook for two more minutes and then thicken it with cornflour mixed in a tablespoon of water and stir to ensure that the sauce thickens.  Add some hot water if the sauce becomes too thick or dry and then return all the meatballs to the pan, cover and heat for approximately five more minutes. Serve over a bed of rice with extra soy sauce for further seasoning and then garnish it as desired.

Variations and Suggestions

A combination of different mince meats put together can enhance the flavour for this dish further but of course omit pork for Kosher and Halal options.  Omit dried shittake mushrooms if time is of the essence and use Swiss Brown or Potabela instead. These meatballs assembled in advance can make life simpler when come cooking time. A favourite dish in my family and no doubt when feeding the young in our family as we all seem to enjoy our meatballs.
