Zucchini Corn and Chick Pea Drops

Ingredients

  • 2 corn on cobs – corn removed by either cutting or grating)
  • 300g potatoes – grated
  • 300g zucchini – grated
  • 100g onion – chopped/sliced
  • 100g chick pea/channa/besan flour
  • 1 heaped teaspoon garam masala
  • 1 heaped teaspoon ground cumin
  • 1/2 teaspoon chili powder (optional)
  • 1 teaspoon baking powder
  • 1 level teaspoon salt or to taste
  • 1/2 teaspoon pepper or to taste
  • 1 egg – lightly beaten
  • 50ml oil or melted butter (optional)
  • 10g parsley – chopped

Method

Preheat the oven to 200 C for 10 minutes, in this time assemble all grated ingredients in a large bowl. To this add all the remaining ingredients and the oil if used, mix and combine well. On a large baking tray line it with grease proof baking paper and take a heaped dessertspoon of the mixture and drop them on the tray and allowing some space for mixture to spread a little. Alternatively use well greased egg rings and place the mixture inside to contain it in perfect circle during baking. Bake for approximately ten minutes on each side turning them over once. Serve as finger food, starter or as mains accompanied with meal of your choice. The size of drops will determine the quantity you’ll make. ¬†They are delicious cold for picnic and lunch boxes too.

 

Variations and My Story

No hard and fast rule for this recipe use your own discretion on what vegetables to use and to remove the corn from the cob by cutting it off in a long motion by a sharp knife or simply grating the corn part off the cob. Cutting it off with the knife will produce less liquid juices then when grating. Once familiar with what works best for you then use that method as preferred.

A lovely dish for young an old alike and can be shallow or deep fried if preferred but omit the egg because the mixture is preferred not so runny especially when deep frying and add extra chick pea flour if needed. Adjust seasoning accordingly because when serving with a sauce or dip it will add further salt to the dish. Can be served with variety of sauces or accompanied with a dip. Invented especially for my son’s 30th birthday as a vegetarian alternative. This is created especially for you my dear son, hope you will enjoy making this dish! :)
